In Mongolia, since the implementation of the School Lunch Law in 2019, all elementary school are providing nutritionally balanced school lunches rather than traditional light meals in a phased manner. However, challenges include providing safe and nutritious menus, managing hygiene and dealing with food poisoning, improving the supply system and procurement method of food ingredients, improving kitchens and equipment, training nutritionists and cooks, and expanding nutrition education. In the target areas, this project will improve the environment for providing nutritionally balanced school lunches using available ingredients, develop a system for providing school lunches based on regional characteristics, and strengthen administrative functions to provide safe and nutritionally balanced school lunches. Through these efforts, the project aims to establish a system to provide safe and nutritionally balanced school lunches in primary and secondary schools nationwide, and to promote and expand the use of nutritionally balanced school lunches. (1) Overall Goal The provision of safe and nutritionally balanced school lunches at primary and secondary schools in Mongolia will be increased. (2) Project Purpose Preparations will be made to provide safe and nutritionally balanced school lunches in primary and secondary schools throughout the country. (3) Output Output 1 An environment (human resource development, nutrition standards, menus, etc.) will be established to provide nutritionally balanced school lunches based on available ingredients. Output 2 A system is in place to provide school lunches based on regional characteristics. Output 3 Administrative functions will be strengthened to provide safe and nutritionally balanced school lunches. |
