This diagnosis aims to strengthen environmental sustainability in the provision of restaurant services within the tourism sector, promoting the transition to a circular tourism development model through responsible consumption. This transition will be facilitated by efficient restaurant operations and services that safeguard resource sustainability, minimize food waste generation, contribute to climate action, and align with the Sustainable Development Goals and the 2030 Agenda. Additionally, it considers the environmental regulations within the tourism sector.
Moreover, in 2024, Peru holds the presidency of the Asia-Pacific Economic Cooperation (APEC) forum. As part of this presidency, "Sustainable growth for resilient development" has been defined as one of its three priorities, which includes the development of "Principles to prevent and reduce food loss and waste". Therefore, this diagnosis will serve as a foundation for the corresponding contributions from the tourism sector. |
